Specification for "Golden Chipper" potatoes
- Dry Matter: Min 19%
- Size: 45mm - 90mm
- Tuber Count Range In 25kg: 100 -150
- Fry Colour: None darker than BPC 2
- Suitable Varieties: Markies, Maris Piper + As agreed between supplier and user
Fry Colour Assessment
Fry colour to be tested according to the following procedure
- Take a representative sample of 20 tubers
- The sample to be rumbled/peeled
- A single, longitudinal, core of 12mm x 12mm to be obtained from each tuber
- Cores to be rinsed and drained
- Frying sample until tender with starting temperature of the oil to be 160oC
- Fry colour is assessed with the BPC colour chart immediately after frying
- Samples to be assessed in daylight or under 'artificial daylight' bulbs
